A made to order specialty of the house with green chiles, corn, tomatoes, roasted garlic, potatoes, green onions, special spices and finished off with fresh cream and butter.

Green Chile Stew

Tender Pork simmered with green chile, potatoes and posole. Served with arroz, refried beans and warm tortillas.

Enchiladas

Spinach Enchiladas

A customer favorite at the Buen Tiempo. Two fresh blue corn tortillas filled with spinach, spices, sour cream and cheeses. Topped with your choice of Chimayo red or green chile. Served with arroz, black beans and pico de gallo. Add beef or chicken.

Chile Rellenos

Two crisp fried green chiles stuffed with white Cheddar and Jack cheeses, sauced with your choice of Chimayo red or green chile. Served with arroz, refried beans and pico de gallo.

Tamales

Two fresh corn tamales stuffed with spicy pork and covered with Chimayo red or green chile. Served with refried beans and arroz.

Burrito Grande

Prepared the traditional New Mexican way. A large flour tortilla filled with chicken or beef and potatoes, smothered with your choice of Chimayo red or green chile and melted cheeses. Served with refried beans, arroz and pico de gallo.

Vegetarian Quesadilla

Another house favorite. A large grilled flour tortilla filled with cheeses, black beans, green onions, potatoes, spinach, pico de gallo, yellow squash and zucchini. Served with Chimayo red or green chile, guacamole and pico de gallo.

Huevos Rancheros

Two fresh over eggs on a fried crispy tortilla with refried and black beans, Chimayo red or green chile, cheese, potatoes, sour cream, pico de gallo, and warm tortillas.

Santa Fe Wrap

Seasoned grilled breast of chicken rolled up in a flour tortilla with guacamole, jack and cheddar cheeses, lettuce, tomato and sun-dried tomato aioli. Served with fries or side salad with choice of dressing.

Buen Burger

1/2 lb. char-broiled sirloin served on a sesame seed bun with lettuce, onion and tomato, coleslaw and fries.

Camarones

Large spicy, chile-grilled shrimp topped with a honey/pinneapple chipotle sauce. Served on arroz with black beans, pico de gallo and warm tortillas.

Arracheras (fajitas)

In Old Mexico they’re called arracheras, in the States they’re called fajitas. At the Buen we serve ’em up sizzlin’ with peppers and onions. Your choice of beef, chicken or rock shrimp. Comes with warm flour or corn tortillas and a side of guacamole, pico de gallo, sour cream and cheese.

Carne Asada

A grilled Angus ribeye served on Chimayo red and green chile with spicy black beans, grilled calabacitas, guacamole, pico de gallo and warm tortillas.

Carne Adovada

Pork tenderloin, lightly marinated in Chimayo red chile and special house spices, grilled and served with Chimayo red and green chile, black beans, arroz, calabacitas.

Chile Rubbed Grilled Prime

A thick slice of medium rare, slow roasted prime rib rubbed with chile and special house spices, then grilled and served with black beans, polenta, calabacitas, and warm tortillas.
